Das Aioli Grundrezept

1-2 Eigelb (oder 1 ganzes Ei, ich nehme nur das Eigelb)
1/2 TL Salz
Pfeffer nach Geschmack
1-2 TL Senf
1 EL Essig oder Zitronensaft
Öl (ich empfehle KEIN Olivenöl, sondern besser Soja- oder Rapsöl)

2-3 Knoblauchzehen

Alle Zutaten außer dem Öl verrühren. Dieses nach und nach tropfenweise zufügen.

Im Mixer einer Küchenmaschine die Zutaten kurz auf höchster Einstellung vermischen. ERST DANN das Öl tröpfchenweise durch die Öffnung fließen lassen. Die Masse bekommt sehr schnell die notwendige Konsistenz Danach langsam die feingehackten Knoblauchzehen in die Masse einarbeiten. Die Aioi mindestens 1-2 Stunden ziehen lassen.
